Most live recordings come from only 2 inputs: a left channel and a right channel. This is generally true whether the recording came from a taper in the audience or from a soundboard patch. And in either case the recording has a very limited scope of adjustmets which can be made. Attempting to EQ a guitar may result in ruining the vocals, for example. And forget about adding effects, separating voices, or panning.
But with the ability to make a live multi-track, each instrument is isolated and can be manipulated after the fact. The difference is easy to notice. A much higher quality recording can be attained. Most bands are interested in this for 2 reasons: a few tracks for a great new demo or a whole show for a live album.
